Breakfast ‘Puffins’ in the Babycakes!

I make these Breakfast Puffins (pancake muffins) in my Babycakes mini muffin maker at least twice a month for breakfast and I thought I’d share.

I started making these when I had breakfast leftovers from a big weekend breakfast. When I have just a bit of leftovers that wont feed everyone who’s home I chop it all up and mix it up with some pancake mix! Very easy and fun, the kids love them!

The amount of leftovers determines how big the batch with be and today it’s a small one. 

1 cup bisquick (or instant pancake mix)

1 egg

1/2 cup almond milk (or whatever kind of milk you use)

2 sausage links chopped

4 pieces of bacon minced

1/4 cup shredded cheddar

I make up the pancake mix first and then stir in the rest. Sometimes it ends up too thick if I dump too much stuff in so I just add a splash more milk. Then I pop them in the Babycakes for 5 minutes but you could easily make these in a mini or regular muffin tin as well.

They go FAST! I had a full plate before I went to get my phone to take a picture!

Fluffy, fast and yummylicious breakfast for my two munchkins that aren’t in school. They are also great with fresh blueberries – just a handful goes a long way in a mini muffin!
